Lentil Meatballs

Category: Recipes

2 cups dried brown lentils, picked over and rinsed
1 egg
1 cup plain flour
1 onion, chopped
½ a bunch of parsley
Salt (to taste)
Pepper (to taste)
Cumin (to taste)
Mint (to taste)
Vegetable oil

Bring to boil the lentils over high heat. Reduce the heat to low and simmer until the lentils are soft. Drain the lentils and purée the mixture until it is mushy. Add the egg, onion, spices and flour and stir well into a big bowl. Use your hands to scoop up one small handful of the mixture at a time, shaping it into a meatball. Roll the meatballs into the breadcrumbs and fry them until they are golden brown.
*The meatballs go perfectly well with a cold beer.
