Winter Cheese Appetizer

300 g desalted white cheese
4/5 wedges pasteurized cheese
130 g plain yoghurt
½ onion - grated
1 tablespoon olive oil
Pepper (to taste)


Crush finely the desalted white cheese into a big bowl. You can easily desalt it if you soak it in water for a few days and change the water every day. Add the wedges pasteurized cheese to the crushed white cheese, and then the yoghurt and grated onion, as you constantly mash the mixture with a fork until it becomes homogeneous. Season with pepper and add a little olive oil. The appetizer is suitable for cold winter evenings. Serve it with black olives and red wine! Bon Appetit!
