Pumpkin Soup

Ingredients:
A medium sized pumpkin
300 g carrots
300 g leeks
½ head of celery
2 cloves of garlic
100 g cooking cream
1 beef stock cube
Salt
Pepper
Salt (to taste)
Parmesan (optional)

 

Preparation:
Dice the vegetables and boil them in salted water. Add the stock cube and purée until it is mushy. Add cooking cream, salt, and pepper and simmer the soup for another 5 minutes. It can be served with croutons and grated Parmesan cheese.
